Weekly Round Up
Happy Friday!
How was everyone’s week?! I’m hoping it was good! This weekend is a pretty chill one for Chandler and I which sounds great to me! On Sunday, I am headed to help out at the stable and am really excited as usual. If you’ve been following along on my Instagram stories when I go to the stable, you all know about Mr. King. King is a retired horse there that I try to give extra special attention to.
He doesn’t get as much attention anymore since he’s retired so every week I make sure to groom him, give him treats and love on him a ton. I know he’s starting to remember me more too because every time I see him now he rubs his head all over me and I basically cry every time because of how sweet it is. I’m so emotional! ? P.S. I just kind of cried thinking about it! Haha!
I noticed last week that he was pretty dirty too! I swear, horses get just as dirty as dogs which I never expected! I was wearing a pink shirt and just from grooming him and being next to him I had a ton of black dirt spots all over me. I couldn’t help but laugh! So, I told my trainer that when I come this week that I’m giving him a bath and she just laughed!

Food:
Chandler loves lasagna. I think his grandma has a family recipe that she makes for him when she sees him. You all know I love pasta but have been trying to make some healthier choices. While that’s 100% true, I also just ate Bagel Bites. Life’s too short haha! Anyways, damn delicious shared a recipe for zucchini lasagna roll ups that looks pretty good! See it below.

Well, for the majority of us who can’t do that right away, I’ve got the perfect recipe! Dorothy from Crazy for Crust shared the prettiest Hawaiian champagne punch recipe on her blog this week.

So, I’ll be honest. When I saw this recipe I was like man that looks good but I have no idea what two of the words are in the title. Haha! This recipe is vegan and can be gluten free if needed! With Cinco De Mayo right around the corner, I thought I’d share a classic recipe this week. Kevin from Closet Cooking shared a recipe for Mexican rice that looks pretty easy to make! See it below.

Another fun recipe for Cinco De Mayo is this one from Plain Chicken for a Frozen Strawberry Margarita Pie. I honestly can’t believe I didn’t come up with this! Last but not least, I had to share this for homemade egg noodles from Cookies and Cups because egg noodles are a key ingredient to my homemade chicken noodle soup! All you need is a handful or two and you’re good! I’ve never tried making them from scratch before though so I’m eager to try this recipe!

Now for some sad news. 🙁 If you haven’t heard, Avicii, the famous Swedish DJ was found dead and the entire world is devastated. When it was first announced, the family didn’t release much information. Now, a second official statement is out with more information that gives us a little insight as to what could have happened. The family is insisting on privacy during this hard time, which is completely normal. I am asking as well that everyone respect their decision for this since no one wants to be bombarded in such a tough time.
